Produce from the Farm this Week

Red leaf lettuce, Crispino Lettuce, Kale, Bok Choy, Cilantro, Onions

Apple Bok Choy Salad
1 head bok choy, finely chopped
1 large apple, shredded
3 small carrots, minced
1/2 cup chopped pink onion
1/2 cup milk
1/2 cup raw cashews
1/4 cup balsamic vinegar
1/4 cup raisins
1 tsp dijon mustard
Combine bok choy, apple, carrot, and chopped onion in a bowl. Blend milk, cashews, vinegar, raisins and mustard in a food processor. Add to chopped vegetables.

Veggies from EMCF this week
Kale Salad with Balsamic Dressing 
1/4 cup dried cranberries
1/3 cup pine nuts
1 bunch kale
1/4 cup balsamic vinegar
3 Tbsp olive oil
1 Tbsp rice vinegar
1 Tbsp honey
1 tsp salt
1/2 tsp pepper
1/4 cup grated parmesan
Toast pine nuts by heating in a pan over medium high heat. Chop kale fine and place in a bowl. Whisk balsamic, olive oil, rice vinegar, honey, salt and pepper in another bowl. Toss kale with cranberries, pine nuts, and dressing. Just before serving, stir in grated Parmesan.

The dry weather continued this week and we continued to irrigate
Cilantro Lime Salad Dressing
1 bunch cilantro
3 garlic cloves
3 Tbsp fresh lime juice
1/2 cup Greek yogurt
1/2 tsp salt
1/4 tsp pepper
6 Tbsp olive oil
Blend and adjust for seasonings. Drizzle over lettuce.
Night grazing on EMCF

Next week…….Swiss chard, dill, lettuce
